1/4 cup mango
2 Tbsp extra virgin olive oil
1 1/2 Tbsp lime juice (about 1 large juicy lime)
large pinch salt
approx. 2 Tbsp water
Place the first 4 ingredients into a blender. Pulse to get started, then puree. Add water until you reach your desired consistency.
We made a simple salad of chopped cabbage and carrots then tossed with this dressing. Red onions and cilantro would be welcomed. So would red bell pepper, cucumbers, tomatoes, green onions… anything really. And, as life goes here in the Caribbean, simple works great too.
