Radicchio-Salmon-Radish Cups

1 can BPA free salmon (or left-over cooked)

2 radishes, chopped

1 celery spear, chopped

1 green onion, greens included, chopped

1 tsp dried dill, or 1 Tbsp fresh

2 Tbsp lemon “cream” 

1 small head radicchio

Drain salmon if using canned. Mix all ingredients except radicchio. Carefully remove the core of the radicchio with a sharp knife. With care, remove leaves, keeping whole.  Put 1-2 heaping tablespoons of salmon salad in each cup.

These travel well! Just snuggle them up in a container. Best kept cold.
