Sunflower Spread

I’m packing this for our plane trip, along with celery spears and radish rounds. The fat and the protein from the seeds will satisfy my munchies and keep me away from the junk at the airport. And the crunchy vegetables will help me release any anxiety as we face a long day of air travel!

1 cup sunflower seeds, soaked in water at least 2 hours, drained

2 green onions, green and white, chopped

6 large basil leaves (or you can substitute small handful cilantro)

½ cup chopped red bell pepper

1-2 Tbsp lemon juice

pinch cayenne pepper

1 Tbsp Tamari, Braggs, or Coconut Amino Acids

¼- ½ cup water

Place all ingredients except water in a food processor and pulse. Scrape sides as needed to incorporate all items into a thick paste. Turn processor on, while running, and add water one tablespoon at a time until your spread is creamy and spreadable.
