Veggie ‘Ruben’ Skillet

You know those moments when everything just “feels right’? I had one of those a couple of nights ago when I taught a class at my local Whole Foods Market. It really fills my soul to share valuable and grounded information while allowing food to work it’s magic.

The class was on digestive health, so I shared information on Leaky Gut, and various other disorders related to compromised digestive health. It’s crazy to think that on average, adult Americans spend over $500 a year on digestive aids. Yet, in my experience, most everyone thinks their digestion is “fine”. I’ll share more about Leaky Gut and other digestive support in a few weeks, I promise.

More than anything I just want to offer you a recipe that was a big hit! If you are looking to keep your digestion running smoothly, want to offer it some support, or simply want a delicious meal- this is perfect!

Veggie ‘Ruben’ Skillet

Dill and Fennel are digestive aids that help to reduce gas and bloating. And fresh raw sauerkraut available in the refrigerated sections of health foods stores adds delicious tang and probiotics. Shiitake mushrooms are rich in a specific carbohydrate, polysaccharides, that have been shown to boost immunity.

Ingredients

1 Tbsp coconut oil

1 small red onion, thinly sliced

1 large fennel bulb, thinly sliced

½ pound shiitake mushrooms, stems removed, sliced

1 Tbsp mustard

½ Tbsp caraway seeds, toasted and crushed

½ Tbsp fennel seeds, toasted and crushed

2 Tbsp fresh dill, chopped

1/4 tsp salt, or to taste

1 cup raw sauerkraut

1/3 cup plain yogurt, optional

Melt the coconut oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally for 5 minutes.

Add the sliced fennel and shiitakes and sauté until mushrooms are soft , about 10 minutes. Remove from heat.* Add mustard, caraway seeds, dill, and salt. Stir well.

Add sauerkraut, and yogurt if using. Stir to combine. Serve alone or in lettuce or cabbage wraps.

* Heating sauerkraut and yogurt will destroy beneficial bacteria. Be sure to add these therapeutic foods once you’ve removed the skillet from heat.
